Baked Potatoes Primavera

Ingredients
- 4 medium potatoes
- 4 cups mixed vegetables frozen
- 1 cup reduced fat sour cream
- 1/2 teaspoon oregano, dried
- 1/2 teaspoon basil, dried
- 1/2 teaspoon black pepper
Directions
- Wash potatoes well. Pierce each potato several times with a fork. Microwave one at a time on high until tender, about 3-4 minutes per side, per potato.
- Heat mixed vegetables, about 3 minutes in the microwave or 5-10 minutes on stovetop.
- Mix the sour cream with the herbs and pepper.
- Split the potatoes in the center and fill with steamed veggies. Top with sour cream and serve hot.
Recipe Tips
Alternatively, cook potatoes in the oven at 350 degrees F for 60 minutes wrapped in aluminum foil.
