Ham and Corn Casserole

Ingredients
- 1/2 cup green pepper, chopped
- 1/2 cup green onion (scallions), sliced, white and green separated
- 1 tablespoon olive oil
- 1 15-ounce can creamed corn
- 1 cup non fat milk
- 1/3 teaspoon black pepper
- 4 ounces ham, cubed
- 1/2 cup instant mashed potato flakes
- 2 cups sweet potatoes, shredded (or another type of potato)
- 1/2 cup Parmesan cheese, grated (or cheddar)
Directions
- In a large skillet, heat olive oil over medium heat.
- Add peppers and onion whites to olive oil and saute 4-5 minutes until tender.
- Stir in corn, milk and pepper. Bring to a boil and then remove from heat.
- Stir in ham and potato flakes.
- Pour into a 9" casserole dish that has been lightly sprayed with vegetable spray.
- Sprinkle with cheese and green onion tops.
- Bake at 375ºF for 25 minutes until bubbly and an inserted thermometer reads 165°F for 15 seconds.
Recipe Tips
You can vary the recipe by adding peas or chopped broccoli in place of the green pepper.
