Cauliflower Casserole

Ingredients
- 1 medium head cauliflower, chopped into small florets
- 2 tablespoons butter, melted
- 1/4 cup Parmesan cheese, shredded
- 2/3 cup seasoned breadcrumbs
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup low fat cheddar cheese, shredded
Directions
- Preheat oven to 350°F. Bring a large pot of water to a boil and cook cauliflower for 7 minutes. It should still be slightly firm.
- Drain cauliflower and place it in a casserole dish.
- In a small bowl, combine butter, Parmesan cheese, bread crumbs and red pepper flakes.
- Pour the breadcrumb mixture over the cauliflower and stir to coat the florets.
- Sprinkle with cheddar cheese.
- Bake for 20 minutes or until cheese is melted.
