Applesauce Loaf Cake
Walnuts add texture and healthy fats to this loaf cake.

Ingredients
- Cooking Spray
- 1/2 cup walnuts, chopped
- 1 1/2 cups applesauce
- 1 large egg
- 1 cup sugar
- 2 tablespoons oil
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup raisins
Directions
- Preheat oven to 350ºF. Spray two loaf pans with cooking spray or lightly coat with oil.
- Place walnuts on a small pan and spread into a single layer. Toast in oven for 5-10 minutes until golden brown. Remove from oven and let cool.
- Mix applesauce, egg, sugar, oil and vanilla in a large bowl
- In a separate bowl, mix flour, baking soda, cinnamon and nutmeg.
- Add flour mixture to the applesauce mix and stir until moist.
- Stir in raisins and nuts.
- Pour half the batter into each pan and bake for 45-55 minutes or until a knife inserted into the middle comes out clean.
Recipe Tips
Toasting the walnuts helps make them crispy and more flavorful.
