Applesauce Bread Pudding

This recipe is a great way to use up bread that you won't be able to finish and is a good source of potassium.

Directions

  1. Preheat oven to 350°F. Coat a 8-inch square pan with cooking spray or lightly coat with oil.
  2. Combine bread with raisins and cinnamon in a large bowl.
  3. Beat the milk, eggs, applesauce, sugar and vanilla in a separate bowl. Combine with the bread mixture and place in the refrigerator for 30 minutes.
  4. Pour mixture into the prepared pan and bake for 30 minutes or until an inserted thermometer reads 165°F for 15 seconds.
  5. Let the bread pudding cool for 15 minutes before serving.

Recipe Tips

Substitute 2/3 cup milk powder mixed with 2 cups water for lowfat milk.
