Vegetarian Bean Quesadillas

Ingredients
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 medium red pepper, chopped
- 2 can black beans, drained and rinsed (or kidney, pinto, or white beans)
- 10 flour tortillas
- 2 cups cheese, shredded
- 1 tomato, diced
Directions
- Cook onions and peppers in a greased skillet about 5 minutes until cooked.
- Add beans to skillet and heat until warmed through.
- Heat 5 tortillas in a separate skillet. Place cheese over tortillas and tomatoes and warm until cheese melts.
- Top each tortilla with the bean and pepper mixture. Place another tortilla on top of the bean mixture.
- Cut each quesadilla into slices and enjoy!
Recipe Tips
Top with avocado, sour cream, and tomatoes or salsa.
Try whole wheat or corn tortillas instead of flour.
