Vegetarian Bean Quesadillas

Ingredients
Instructions
  1. Cook onions and peppers in a greased skillet about 5 minutes until cooked.
  2. Add beans to skillet and heat until warmed through.
  3. Heat 5 tortillas in a separate skillet. Place cheese over tortillas and tomatoes and warm until cheese melts.
  4. Top each tortilla with the bean and pepper mixture. Place another tortilla on top of the bean mixture.
  5. Cut each quesadilla into slices and enjoy!
Recipe Notes

Top with avocado, sour cream, and tomatoes or salsa.

Try whole wheat or corn tortillas instead of flour.
