Vegetable Soup Shepherd's Pie

Ingredients
- 1/2 cup onion, chopped
- 1 pound ground beef, lean
- 1 teaspoon black pepper
- 2 cans low-sodium vegetable soup
- 2 cups corn
- 2 cups instant mashed potatoes, prepared
Directions
- Preheat oven to 400°F.
- In a large pan over medium high heat, add onions and beef. Stir to cook until beef is browned, about 7 minutes. Drain the fat.
- Add pepper, soup and corn. Pour mixture into an 8 x 8 pan.
- Cover beef mixture evenly with potatoes.
- Bake uncovered for 20 minutes.
Recipe Tips
This dish can be made with ground turkey in place of ground beef.
