Vegetable Soup Shepherd’s Pie

Instructions
  1. Preheat oven to 400°F.
  2. In a large pan over medium high heat, add onions and beef. Stir to cook until beef is browned, about 7 minutes. Drain the fat.
  3. Add pepper, soup and corn. Pour mixture into an 8 x 8 pan.
  4. Cover beef mixture evenly with potatoes.
  5. Bake uncovered for 20 minutes.
Recipe Notes

This dish can be made with ground turkey in place of ground beef.
