Two Potato Gratin

Ingredients
- 2 medium potatoes peeled and sliced into 1/8 inch pieces
- 2 medium sweet potatoes peeled and sliced into 1/8 inch pieces
- 1 clove garlic, cut in half
- 1 tablespoon butter
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 teaspoons thyme, fresh (or 1/2 teaspoon dried, optional)
- 1/2 cup light cream
- 1 cup whole milk
- 1 cup reduced fat Swiss cheese, shredded (or Cheddar)
Directions
- Preheat oven to 350 degrees F.
- Rub a 8 X 8 baking dish with garlic, then coat with 1 tablespoon butter. Whisk the salt, pepper, and thyme (if using) into cream and milk.
- Place 1/2 of baking potatoes on bottom of dish and add 1/2 cup cream mixture then 1/2 cup cheese. Layer with sweet potato, repeat cream and cheese, then remaining potato, cream and cheese.
- Cover with tin foil and place on a sheet pan. Bake for 1 hour or until potatoes are soft (use a knife to test). Remove foil and bake an additional 10 minutes.
- Remove from oven and allow to rest 10 minutes before serving.
Recipe Tips
You can mix the sweet potato and baking potato in each layer for more color throughout each serving.
This can be made 2 days in advance, just reserve the last layer of cheese to add right before baking.
