Sweet Potato Shepherd's Pie
A new twist to this classic shepherd's pie recipe, sweet potatoes are full of vitamin A and are a good source of potassium.

Ingredients
- 2 pounds sweet potatoes, peeled and chopped
- 1 cup low fat milk (or milk alternate)
- 1 tablespoon vegetable oil
- 2 cups onion, chopped
- 3 cloves garlic, minced
- 2 pounds 85% lean ground beef
- 2 medium carrots, diced (or one cup canned carrots, drained)
- 1 cup frozen peas (or one cup canned peas, drained)
- 1/2 cup tomatoes, crushed
- 2 tablespoons tomato paste
Directions
- Preheat oven to 325°F.
- Place the potatoes in a large saucepan and cover with water. Bring to a boil then reduce heat to simmer. Cook for about 15 minutes, or until potatoes are tender. Drain and potatoes then return to the pan.
- Add milk and mash until smooth. Season with salt and pepper to taste. Set aside
- Heat oil in a large fry pan and sauté onion and garlic until tender.
- Add ground beef and cook until brown.
- Add carrots, peas, tomatoes, and tomato paste. Stir to blend all ingredients together. Add pepper to taste.
- Spread beef mixture in a 9x12 baking dish. Top with mashed sweet potatoes and spread into a smooth layer. Bake for 30 minutes uncovered.
Recipe Tips
Make sure internal temperature is 165°F for 15 seconds before serving.
Two cups of mixed frozen vegetables can be used in place of carrots and peas.
