Spinach Frittata

Ingredients
- 5 cups spinach
- 1 cup parsley, flat-leaf
- 1 cup cilantro, chopped
- 3 green onion, sliced
- 6 large eggs
- 3 tablespoons almond flour (or whole wheat flour)
- 2 tablespoons olive oil
- 2 small red potatoes, peeled, cubed, cooked
- 1/4 cup Parmesan cheese, grated
Directions
- In a food processor, chop the spinach, parsley, cilantro, and spring onions.
- In a medium bowl, beat the eggs. Add the almond flour. Add the spinach mixture and stir to combine.
- Heat olive oil over medium heat in a large skillet.
- Pour the egg mixture into the pan then add the potato cubes, spreading them out evenly.
- Reduce the heat to low and cook, covered, until the underside is golden brown, about 10 minutes.
- Cut the frittata into quarters and flip each one over. Cover and cook until the frittata is firm and the potatoes are tender, about 10 minutes.
- During the last few minutes of cooking, sprinkle the frittata with Parmesan.
