Spiced Baby Carrots

Ingredients
- 3 cups water
- 1/2 teaspoon cumin, ground (optional)
- 1/2 teaspoon cinnamon, ground
- 1 pound baby carrots
- 2 tablespoons margarine
- 2 tablespoons brown sugar
- 1/8 teaspoon salt
- 2 teaspoons lemon juice
Directions
- In a medium-size saucepan, bring water, cinnamon, and cumin to a boil.
- Add carrots and cook until soft but not mushy, about 5 minutes. Drain well and return the carrots to the pan.
- Add margarine, brown sugar, salt, and lemon juice to the carrots and stir.
- Cook 3 to 4 minutes or until the liquid is thick like syrup.

Use seasonings on any root vegetable like sweet potatoes.
