Ingredients
- 1 pound ground beef, lean
- 1 medium onion, chopped
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 3 cups brown rice, cooked
- 1 16-ounce can pinto beans, drained
- 1 4-ounce can diced green chiles
- 1 medium tomato, chopped
Directions
- Brown meat in a skillet. Drain fat and return beef to skillet.
- Add onion, chili powder, cumin and salt. Cook until onion is tender.
- Stir in rice, beans and chiles. Heat thoroughly.
- Top with tomato and serve.

You can add other toppings such as sliced avocado or low-fat shredded cheese.
