Pasta Fagiola

Ingredients
- 1 tablespoon + 1 teaspoon oil, separated
- 1 cup bell pepper, chopped
- 2/3 cup onion, chopped
- 2/3 cup celery, chopped
- 1 3/4 cups spaghetti sauce
- 2 cups water
- 1/4 teaspoon garlic powder
- 1 11-ounce package uncooked macaroni
- 1 15.5 oz can low sodium white beans, drained
Directions
- Heat oil in a large saucepan, then add green pepper, onion, and celery.
- Saute vegetables until soft, about 5 minutes.
- Add spaghetti sauce, water, and garlic powder to vegetables. Simmer for 30 minutes on low heat.
- In a separate saucepan, cook pasta according to package directions then drain. Return pasta to pan.
- Add beans to sauce, and let warm for 5 minutes.
- Add pasta to sauce, and mix well.
Recipe Tips
Try using cannellini beans or other white beans in this recipe. Rinsing the beans after draining them will help to remove additional sodium.
