Green Onion Omelet

This southwestern-style omelet is easy to make and is a great way to use canned potatoes!

Directions

  1. In a large skillet over medium heat, lightly brown potatoes in the vegetable oil for 5 to 10 minutes.
  2. In a mixing bowl, combine egg, egg whites, milk, and salt. Mix well
  3. Stir in ham, tomatoes, and green onions.
  4. Pour egg mixture over potatoes in the skillet.
  5. Cover skillet and continue to cook eggs over medium heat until firm, not runny (about 8 minutes).
  6. Cut the omelet into four pieces and serve.

Recipe Tips

Omit the ham for a vegetarian option.
