  1. Add potatoes, onion and salt to a large pot and cover with water.
  2. Bring to a boil over high heat, then reduce to medium. Simmer uncovered until potatoes are tender, about 10-12 minutes.
  3. Add green beans and heat through, about 2 minutes. Drain and serve.

Recipe Tips

Top with 2 teaspoons lemon or lime juice, or add 1/2 teaspoon chili powder for extra flavor.
