Green Bean and Mushroom Medley
Green beans are a great source of vitamin A which is important for eye health. This recipe is easy and makes a great side dish.

Ingredients
- 3 cups green beans, cut into 1-inch pieces
- 2 carrots, cut into slices
- 3 tablespoons olive oil
- 1 large onion, sliced
- 1 pound mushrooms, sliced
- 1 teaspoon lemon pepper seasoning
- 1/2 tablespoon garlic salt
- 1/4 cup almonds, slivered, toasted
Directions
- Place green beans and carrots in 1 inch of boiling water. Cover, and cook until tender but still firm, about 3 minutes. Drain.
- Add oil to heated skillet. Sauté onions and mushrooms until almost tender.
- Reduce heat, cover, and simmer 3 minutes. Stir in green beans, carrots, lemon pepper, and garlic salt.
- Cover, and cook for 5 minutes over medium heat. Serve warm.
Recipe Tips
This makes a great vegetable side dish to go with your favorite main dish. Serve with lemon potatoes.
