Elegant Chicken Marsala

Ingredients
- 1/3 cup all purpose-flour
- 1 teaspoon black pepper
- 3 large chicken breast, boneless and skinless cut in half length-wise
- 1 teaspoon olive oil
- 8 ounces mushrooms, sliced
- 1/3 cup onion, chopped
- 1 clove garlic, minced
- 1 cup cooking wine
- 5 teaspoons cornstarch
- 2/3 cup low-sodium chicken broth
Directions
- In a shallow bowl, mix flour and pepper together. Dredge chicken breasts through flour and shake off excess.
- In a large skillet, heat oil over medium heat. Add chicken and cook 5-6 minutes each side, until cooked through. Remove from pan and keep warm.
- In same skillet, add mushrooms and onion. Cook over medium heat 4-5 minutes until mushrooms tender.
- Add garlic and cook until fragrant, about a minute. Add the wine and increase heat to medium-high.
- In a small bowl, combine cornstarch and chicken broth until smooth.
- Add to pan and bring liquid to a boil, cook and stir constantly for 2 minutes or until slightly thickened.
- Serve chicken topped with sauce and mushrooms.
Recipe Tips
Serve over brown or white rice.
Use chicken broth or water in place of cooking wine.
Use pork chops or chicken thighs in place of chicken breasts.
