Breakfast Sandwich with Hummus
Hummus adds flavor and juiciness to sandwiches, use it instead of mayonnaise.

Ingredients
- 12 slices whole wheat bread
- 4 small tomatoes diced
- 2 cloves garlic finely chopped
- 6 leaves basil sliced (optional)
- 2 teaspoons olive oil or canola or vegetable oil
- 2 slices deli turkey sliced and minced
- 6 large eggs or 1 1/2 cups liquid eggs
- 1 cup hummus
Directions
- Preheat oven to 350°F. Place bread on a sheet pan and let it toast for about 10 minutes. After bread is toasted, remove and let come to room temperature.
- Season tomatoes with garlic, salt, pepper, and basil (if using); set aside.
- Heat a pan over medium on the stove and add 1 teaspoon oil. Add turkey and cook until lightly brown, about 3 minutes. Set aside.
- Crack eggs into a bowl and use a fork to whisk until frothy. Heat 1 teaspoon oil over medium heat and add eggs, stirring frequently until solid. Add turkey and set aside.
- Spread a layer of hummus on each slice of bread.
- Add turkey and eggs on top and top with diced tomatoes.
Recipe Tips
You can use any type of deli meat in this recipe or you can make it vegetarian by choosing to omit meat.
