Dutch Potato Salad
This recipe is tangy and delicious and would make a great side dish at a potluck.

Ingredients
- 2 1/4 cups water, dived
- 1 1/4 cups dehydrated diced potatoes, uncooked
- 2 tablespoons onion, diced
- 1/4 cup green pepper, diced
- 1 large hard-boiled egg, diced
- 1 slice bacon, diced
- 1 tablespoon flour
- 2 tablespoons sugar
- 3/4 teaspoon salt
- 2 1/2 tablespoons vinegar
Directions
- Combine 2 cups water and potatoes in a medium saucepan. Bring to a boil.
- Cover and cook on low for 15 minutes.
- Refrigerate for at least two hours and then drain.
- Stir in onion, green pepper, and egg.
- In a small saucepan cook diced bacon. Stir in flour, sugar and salt. Then add vinegar and 1/4 cup water.
- Heat over medium heat until thickened, about 2 minutes.
- Pour over potatoes and mix. Serve warm.
