Delicious Greens
Sautéed greens are a great way to get more greens into your diet without all the volume. They are also a good option for individuals that have digestion issues as cooking the greens helps to break down the plant a bit more before you eat it.

Ingredients
- 3 1/2 cups mustard greens, stems removed, washed and torn into pieces
- 2 cups cabbage, shredded
- 1 tablespoon olive oil
- 2 tablespoons garlic, minced
- 1 onion, chopped
- 1 tablespoon white vinegar
Directions
- In a large saucepan, boil 2 quarts (8 cups) of water.
- Add mustard greens, return to a boil and cook 3 minutes. Add cabbage and cook 1 more minute. Drain in colander.
- Heat a large non-stick skillet over medium high heat. Add oil and sauté garlic and onion until light brown, about 3 minutes.
- Add greens and vinegar and cook briefly, about 3 minutes. Serve hot.
Recipe Tips
Use kale or other favorite hearty greens in place of cabbage and mustard greens.
