Cucumber Salad with Horseradish Dressing
Leafy greens and cucumbers are early spring vegetables and they shine in a tangy horseradish dressing.

Ingredients
- 1 large English cucumber
- 1 small red onion
- 3 tablespoon white wine vinegar
- 1 tablespoon sugar
- 1 tablespoon prepared horseradish
- 1 tablespoon Dijon mustard
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 1 5 oz. package mixed greens (or 4 cups greens, spinach, or lettuce)
Directions
- Thinly slice the cucumber. Halve and thinly slice the red onion.
- In a bowl, whisk together the vinegar, sugar, horseradish, mustard, dill, and oil.
- In a large bowl, combine cucumbers, onion, mixed greens, and horseradish vinaigrette. Toss to combine. Serve immediately.
Recipe Tips
Serve with roasted meat like chicken or fish, or add a can of drained and rinsed chickpeas to make it a vegetarian meal.
