Crockpot Chicken Noodle Soup
The crockpot is a great way to throw some ingredients together and come back later to a full meal. This chicken soup is a classic dish that requires no fuss.

Ingredients
- 1 large onion, cut into quarters
- 2 large carrots, peeled and chopped
- 2 stalks celery, chopped
- 1 pound chicken breasts, boneless and skinless
- 4 cups low-sodium chicken broth
- 3 cups water
- 1 bay leaf
- 1 teaspoon black pepper
- 2 cups wide egg noodles, uncooked
Directions
- Add onion, carrots, celery, chicken, broth, water, bay leaf, and pepper to crock pot.
- Cook on low for 7 hours (or high for 4 hours).
- Remove onion and chicken. Toss the onion and shred the chicken with two forks.
- Put chicken back into crock pot and add the noodles. Cook another hour on high or until noodles are cooked.
- Serve warm.
Recipe Tips
Use any type of chicken in this recipe, chicken thighs or canned chicken work well.
Use vegetable broth in place of chicken broth, or use 7 cups of water and 1 teaspoon of Italian seasoning.
