Chicken and Spinach Pasta

Ingredients

Directions

  1. Heat oil in a large skillet over medium-high heat. Season chicken with pepper.
  2. Add chicken to skillet and cook, flipping once, until cooked, about 4-6 minutes per side. Transfer to cutting board, let rest 5 minutes and slice into strips.
  3. In empty skillet, add garlic, tomatoes and spinach. Add milk, parmesan, and 1/2 cup water. Bring to a simmer over medium heat and cook 10 minutes until slightly thickened.
  4. Add cooked pasta to skillet and toss until coated. Add chicken and mix well.
  5. Serve warm.

Recipe Tips

Use any type of pasta on hand.

Use 1 10-ounce package frozen spinach (thawed and drained) in place of baby spinach.

Use any type of canned tomatoes in place of fresh.
