Cod with Balsamic Cherry Tomatoes
Serves4 (1 fillet and 1/2 cup tomato)

Ingredients
- 2 teaspoons olive oil, divided
- 4 4-ounce cod fillets
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pint cherry tomatoes
- 3 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 2 tablespoons basil, chopped
- 2 cups brown rice, cooked
Directions
- Heat 1 teaspoon oil in a large skillet over medium high heat. Sprinkle fish with salt and pepper and add to pan.
- Cook 5 minutes each side, or until fish flakes easily with a fork. Remove from pan.
- Add remaining teaspoon of oil to pan. Add tomatoes and garlic and cook 3 minutes.
- Add vinegar, cook another minute or until tomatoes start to burst. Stir in basil.
- Serve fish over rice and topped with tomato mixture.
Recipe Tips
Add 1 medium onion to be cooked with tomatoes.
Use any type of fish, white fish works best for this recipe.
Top with mozzarella or goat cheese.
