Applesauce Bread Pudding
This recipe is a great way to use up bread that you won't be able to finish and is a good source of potassium.

Ingredients
- Cooking Spray
- 12 slices white bread, cut into 1-inch cubes
- 1 cup raisins
- 2 teaspoons cinnamon
- 2 cups low fat milk
- 4 large eggs
- 1 cup applesauce
- 1/2 cup brown sugar, packed
- 1 1/2 teaspoons vanilla
Directions
- Preheat oven to 350°F. Coat a 8-inch square pan with cooking spray or lightly coat with oil.
- Combine bread with raisins and cinnamon in a large bowl.
- Beat the milk, eggs, applesauce, sugar and vanilla in a separate bowl. Combine with the bread mixture and place in the refrigerator for 30 minutes.
- Pour mixture into the prepared pan and bake for 30 minutes or until an inserted thermometer reads 165°F for 15 seconds.
- Let the bread pudding cool for 15 minutes before serving.
Recipe Tips
Substitute 2/3 cup milk powder mixed with 2 cups water for lowfat milk.
