Apple, Brussels Sprouts, and Salami Sheet Pan Dinner
Sheet pan dinners are a quick way to get a meal on the table, and clean up is a snap! You can make this a vegetarian meal by not using salami.

Ingredients
- 2 pounds brussels sprouts
- 2 medium red onions
- 1 pound fingerling potatoes
- 1 3-oz. package salami
- 6 tablespoons olive oil
- 1 medium apple
- 1/2 cup Feta cheese
- 3 cups baby kale
- 2 tablespoons lemon juice
- 1/4 cup walnuts
Directions
- Preheat the oven to 400°F. Trim the ends of the Brussels sprouts and cut in half. Peel and quarter the onions. Peel the potatoes and cut into quarters. Slice the salami into strips.
- Mix the sprouts, onions, potatoes, and salami with 4 tbsp oil and spread on a parchment-lined baking sheet. Season with salt (in moderation) and pepper. Bake for about 20 minutes in the oven.
- Meanwhile, cut the unpeeled apple into quarters, remove the core and cut the flesh into slices. After 10 minutes, add the apple to the sheet pan.
- Mix the feta and kale with the remaining oil and lemon juice and top with walnuts. Serve salad with roasted sheet pan vegetables and salami.
