Brussels Sprouts with Grapes
Brussels sprouts are a good source of potassium and folate, and are a simple way to add more fiber to your meals. The grapes help bring out the sweetness of the sprouts!

Ingredients
- 2 tablespoons olive oil
- 1 1/2 pounds brussels sprouts
- 1 tablespoon honey
- 1 1/2 cups seedless red grapes (or green grapes)
- 1/2 cup walnuts, rough chopped
Directions
- Trim the thick ends of the Brussels sprouts and halve the grapes.
- Heat the oil in a skillet over medium and add the Brussels sprouts and honey. Cover and cook for 10 minutes or until tender. Toss every couple of minutes to prevent burning.
- Add the grapes and walnuts, and cook for another 2 min. Season with salt (in moderation) and pepper.
