Roasted Turnips

Ingredients
- 2 pounds turnips
- 2 tablespoons olive oil (or vegetable oil)
- 1 small onion, peeled and sliced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- black pepper
Directions
- Preheat oven to 450 F.
- Wash turnips. If they are small, cut into wedges. If they are large, cut them into a large dice.
- In a bowl, toss turnips with olive oil, onion, thyme, salt and pepper. Pour out into a baking dish (13 x 9 works best).
- Roast for about 30 minutes or until turnips begin to soften, stirring halfway through.
