Tortellini Soup

Ingredients
- 1 cup beans, great northern, uncooked
- 1/4 cup lentils, brown, uncooked
- 1/4 cup split peas, green, uncooked
- 2 tablespoons parsley, dried
- 3 teaspoons chicken broth granules
- 1/8 cup sun-dried tomatoes, chopped
- 2 teaspoons Parmesan cheese, grated
- 1 teaspoon onion powder
- 1/2 teaspoon thyme, dried
- 3/4 cup tortellini, uncooked or frozen
- 1 cup carrots, chopped
- 1 cup celery, chopped
Directions
- Place beans into a 4-5 quart heavy pot with 8 cups of water. Bring to a boil, reduce heat to medium, and cover.
- Simmer until the beans are tender, about 1 1/4 to 1 1/2 hours. Add 4 cups of water, seasonings, tortellini, and 1 cup carrot and celery.
- Return to boil. Reduce heat to low, cover and simmer 1/2 hour, until tortellini and vegetables are tender. Serve hot.
Recipe Tips
Use any type of beans and lentils. Orange lentils have a less earthy flavor.
