Pork Fried Rice

Ingredients
- 2 teaspoons canola oil divided
- 1 large egg, slightly beaten
- 2 tablespoons soy sauce plus 1/4 teaspoon soy sauce
- 1 clove garlic, minced
- 1 tablespoon fresh ginger, peeled and grated
- 1 bunch scallions, sliced thin
- 1/2 pound ground pork
- 2 medium carrots, shredded
- 1/2 cup frozen peas
- 2 cups white rice, cooked
- 2 tablespoons rice vinegar
Directions
- Heat 1 teaspoon oil in a large non-stick skillet over medium-high heat. Meanwhile, combine egg and 1/4 teaspoon soy sauce in a small bowl.
- Add egg mixture to skillet and swirl to coat bottom of the pan. Cook about 1 minute without stirring, then scramble and remove from pan when cooked.
- Add remaining oil to skillet. Add garlic, ginger, and scallion to skillet. Cook 30 seconds or until fragrant.
- Add pork and cook until done, about 5 minutes. Stir occasionally and break up meat.
- Add carrots, peas and rice to pork. Stir to combine. Fold in cooked egg.
- Add remaining soy sauce and vinegar and cook, stirring constantly, until coated, about 1 minute.
- Let cook another 2 minutes until warm. Serve.
Recipe Tips
Use brown rice or white rice.
Add 1/4-1/2 teaspoon red chili flakes to add spice.
