Chicken Pie with Carrots
This hearty baked chicken dish is rich in potassium and is an excellent source of protein that will keep you full and satisfied.

Ingredients
- 2 large carrots, grated
- 1 large baking potato, peeled and grated
- 1 tablespoon butter, unsalted melted
- 1 pound boneless and skinless chicken breast, cubed
- 1/2 cup frozen peas, defrosted and drained
- 1 cup orzo, cooked
- 3 tablespoons heavy cream
- 2 tablespoons water
Directions
- Preheat oven to 350 degrees F.
- Mix together grated carrots, potatoes and melted butter in a medium bowl. Set aside.
- Place chicken, peas, cooked orzo, cream, and water in pie dish and mix well.
- Spoon carrot/potato mixture over the chicken mixture.
- Bake for 45-50 minutes, until the top is golden. Serve warm.
Recipe Tips
Add 1 medium, diced onion or 8 ounces chopped mushrooms to the chicken mixture for extra vegetables.
Use any type of chicken, such as thighs or legs.
