Wonderful Red Beans

Ingredients
- 1/2 pound red beans, dry
- 4 ounces ham, chopped
- 1/2 cup green bell pepper, chopped
- 1 cup onion, chopped
- 1 stalk celery, chopped
- 1 tablespoon parsley
Directions
- Rinse beans and place them in a large pot. Cover them with water and soak overnight.
- Drain the beans, and put them in a pan. Cover with water again.
- Add the remaining ingredients. Bring to a boil, reduce heat to a simmer and cook uncovered over medium heat for one hour, stirring occasionally.
Recipe Tips
You can use about three cups cooked beans in place of the dry beans. Cover the cooked beans with water then follow the directions in step 3.
