Ingredients
- 1 1/2 pounds 90% lean ground beef
- 1 13-ounce can spinach, drained, squeezed dry and chopped
- 2 medium carrots, grated
- 1 tablespoon Worcestershire sauce
- 1 large egg, beaten
- 1/2 cup vegetable or tomato juice
- 1/4 cup Parmesan cheese, grated
- 1/4 cup bread crumbs or crushed crackers
- 1/4 cup onion, chopped
- 1/4 teaspoon black pepper
- 2 teaspoons brown sugar
Directions
- Preheat oven to 350°F.
- Combine all ingredients in a medium bowl and mix well.
- Pat the mixture into a loaf pan. Bake for 45 minutes or until an inserted thermometer reads 155°F for 15 seconds.
Recipe Tips
You can substitute other vegetables such as chopped peppers or zucchini.
