Vegetable Soup Meatloaf

Ingredients
- 1 15-ounce can condensed vegetable soup
- 1 large egg, beaten
- 1/2 cup dry bread crumbs
- 1/4 cup green bell pepper, seeded and chopped
- 1 tablespoon mustard
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound ground beef, lean (or ground turkey)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Directions
- Preheat oven to 350°F.
- Mix vegetable soup, egg, bread crumbs, green pepper, mustard, salt and pepper together in a medium bowl.
- Add ground meat and mix to combine.
- Shape into a loaf and place into a shallow baking pan.
- Bake for 50 minutes or until an inserted thermometer reads 155°F for 15 seconds.
Recipe Tips
You can add additional vegetables such as chopped onions and carrots to the meat mixture.
