Turkey Meatball Lettuce Wraps

Ingredients
- 1 pound turkey, lean, ground
- 1 cup quinoa, cooked
- 1 medium onion, grated
- 3 cloves garlic, minced
- 1 small zucchini, grated
- 1/4 cup parsley, chopped
- 1/4 teaspoon red pepper flakes
- 2 tablespoons soy sauce, low sodium
- 1 teaspoon oregano, ground
- 1/2 teaspoon black pepper
- 1 egg, slightly beaten
- 2 cups tomato sauce
- 10 medium butter lettuce leaves
- 6 tablespoons Parmesan cheese, grated
Directions
- Preheat oven to 350 degrees F. Coat a large baking sheet with non-stick spray.
- In a large bowl, combine turkey, quinoa, onion, garlic, zucchini, parsley, red pepper flakes, soy sauce, oregano, black pepper, and egg. Stir to combine well.
- Form meatballs from 1 1/2 tablespoons of the meat mixture and roll into a ball. Place on prepared baking sheet, leaving space between them.
- Bake meatballs about 20 minutes, until internal temperature reaches 165 degrees F.
- While meatballs are cooking, heat tomato sauce in a large saucepan over medium-low heat.
- Transfer cooked meatballs to sauce and gently stir to coat them.
- Make wraps using 1 piece of lettuce, place two meatballs in it, top with parmesan and enjoy.
Recipe Tips
Use any type of ground meat in place of turkey.
Alternatively, serve over your favorite pasta cooked al dente.
Use any type of rice in place of quinoa.
