Slow Cooker Spinach, Chicken and Wild Rice Soup

Ingredients
- 3 cups water
- 1 14.5-ounce can reduced sodium chicken broth
- 1 10 3/4-ounce can condensed cream of chicken soup reduced fat and reduced sodium
- 3 cups chicken breast, cubed (about 2 breasts)
- 2/3 cup wild rice, uncooked rinsed and drained
- 1 large onion, diced
- 1/2 teaspoon dried thyme crushed
- 1/4 teaspoon black pepper
- 2 cups baby spinach, chopped
Directions
- In slow cooker, combine water, broth, cream of chicken soup, chicken, rice, onion, thyme and pepper.
- Cover and cook on low setting for 7-8 hours, or on high for 3 1/2 hours.
- Stir in spinach and serve immediately.
Recipe Tips
Use any type of rice in this recipe. Brown rice is a good substitute for wild rice, but white rice will work also.
Use chicken thighs in place of chicken breasts.
Add 1 pound of sliced mushrooms for extra flavor and vegetables.
