Skillet Pork Chops with Potatoes

Ingredients
- 1 teaspoon canola oil
- 1/3 cup Parmesan cheese, grated
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 4 3.5-ounce pork chops
- 2 tablespoons all purpose-flour
- 2 medium onions, sliced
- 4 medium yellow potatoes, thinly sliced
- 3/4 cup water, hot
- 1 tablespoon lemon juice
Directions
- Heat oil in a large skillet over medium heat. In a small bowl combine the parmesan, salt, pepper, garlic powder, and onion powder. Set aside.
- Toss pork chops with flour and add to the skillet. Cook for 4 minutes each side until browned. Remove from heat.
- Add onions to skillet and cook 5 minutes until starting to brown. Add chops back into skillet.
- Sprinkle 1/2 of the cheese mixture over the pork chops. Top chops with potatoes and then sprinkle remaining cheese mixture over potatoes.
- Pour water and lemon juice over chops and cover skillet.
- Reduce heat to low and simmer 35 minutes or until vegetables are tender and pork registers 145 degrees F internal temperature.
- Serve warm.
Recipe Tips
Use any type of potato- red potatoes are especially delicious.
Add 1 10-ounce package of frozen spinach for added fiber.
Try any herbs and spices you like in this recipe- tarragon, oregano, rosemary, or red pepper flakes are great!
