Sauteed Beef and Pepper Skillet

Ingredients
- 1 pound lean beef sirloin trimmed and thinly sliced into bite-size pieces
- 2 tablespoon soy sauce
- 2 tablespoon cider vinegar
- 3 cloves garlic crushed with press
- 1 tablespoon grated peeled fresh ginger
- 1 teaspoon ground cumin
- 1 tablespoon vegetable oil
- 1 large red or yellow pepper seeded and thinly sliced
- 1 small red onion thinly sliced
- 2 small tomatoes halved and thinly sliced
- chopped fresh parsley for garnish
Directions
- In large resealable plastic bag, combine beef, soy sauce, vinegar, garlic, ginger and cumin. Seal bag and let stand 20 minutes or up to overnight.
- In 12" skillet, heat oil on medium-high until hot. Drain beef, discarding marinade; add to skillet (oil may spatter). Cook 3 minutes or until browned, stirring twice. Transfer beef to plate.
- To same skillet, add pepper and onion. Cook 5 minutes or until almost tender, stirring occasionally. Add tomatoes and beef. Cook 5 minutes. Remove from heat. Serve immediately.
