Sauteed Beef and Pepper Skillet

Instructions
  1. In large resealable plastic bag, combine beef, soy sauce, vinegar, garlic, ginger and cumin. Seal bag and let stand 20 minutes or up to overnight.
  2. In 12″ skillet, heat oil on medium-high until hot. Drain beef, discarding marinade; add to skillet (oil may spatter). Cook 3 minutes or until browned, stirring twice. Transfer beef to plate.
  3. To same skillet, add pepper and onion. Cook 5 minutes or until almost tender, stirring occasionally. Add tomatoes and beef. Cook 5 minutes. Remove from heat. Serve immediately.

Serve over rice or baked potatoes.
