Potato Salad

Ingredients
- 1 pound (4 medium) potatoes, washed and peeled
- 1 cup onion, chopped
- 1/4 cup sweet pickle relish
- 1/2 cup celery, chopped
- 1/2 cup light mayonnaise
Directions
- Wash potatoes; place in a sauce pan. Cover with water and bring to boil.
- Simmer until soft, about 15 minutes. Drain and cool.
- Combine onion, relish and celery. Stir in mayonnaise.
- Cube potatoes and blend with dressing.
- Cover and chill several hours.
