Potato Cakes

Ingredients
- 2 cups potatoes, cooked, peeled and mashed
- 1 large egg
- 1 cup flour
- 2 tablespoons whole milk
- 1/4 cup vegetable oil
Directions
- Mix mashed potatoes, egg, flour and milk thoroughly.
- Shape into flat cakes, about 1/2" thick.
- Heat oil in a skillet until hot.
- Add potato cakes to hot skillet.
- Cook until golden brown and an inserted thermometer reads 165°F.
Recipe Tips
This is a great way to use up leftover mashed potatoes.
