Instructions
  1. Mix mashed potatoes, egg, flour and milk thoroughly.
  2. Shape into flat cakes, about 1/2″ thick.
  3. Heat oil in a skillet until hot.
  4. Add potato cakes to hot skillet.
  5. Cook until golden brown and an inserted thermometer reads 165°F.
Recipe Notes

This is a great way to use up leftover mashed potatoes.
