Pork Stroganoff

Ingredients
- 1 teaspoon canola oil
- 4 4-ounce pork chops, center-cut
- 1 medium onion, thinly sliced
- 8 ounces mushrooms, sliced
- 1/4 cup water
- 2 teaspoons prepared mustard
- 1/4 teaspoon salt
- 1/2 cup sour cream, low fat
- 2 tablespoons parsley, chopped
Directions
- Heat oil in a large skillet over medium high heat. Add chops and cook until browned on both sides, about 3-4 minutes each side.
- Remove chops from skillet and keep warm.
- Add onion and mushrooms to skillet and cook until tender, stirring occasionally, about 5-7 minutes.
- Return chops to skillet. Add water, mustard and salt. Increase heat to high and bring to a boil.
- Cover, reduce heat to low and simmer for 25-30 minutes.
- Remove chops to platter.
- Add sour cream to skillet and heat through, making sure not to boil.
- Pour sauce over chops, top with parsley and serve warm.
Recipe Tips
Serve over pasta, egg noodles, or potatoes.
Pork should reach an internal temperature of 145 degrees F.
Cut pork into cubes for easier serving.
