  1. Preheat the oven to 325°F.
  2. Melt the peanut butter in the microwave. Start with 1 minute and add 30 seconds as needed.
  3. Add the melted peanut butter, syrup of choice, salt, cinnamon, and vanilla extract in a large bowl.
  4. Stir to combine. Fold in the oats and nuts or seeds. For nuts and seeds use what you have! Both have great sources of dietary fiber and healthy fats!
  5. Line a baking sheet with parchment paper, and pour the granola mixture on top. Spread the mixture into an even layer on the baking sheet.
  6. Bake for 25 minutes.
  7. Let the granola cool for 30-60 minutes before breaking it into pieces.
