Peanut Butter Granola

Ingredients
- 2 cups oats
- 1/2 cup peanut butter melted
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1/4 cup maple syrup, molasses, corn syrup, or honey
Directions
- Preheat the oven to 325°F.
- Melt the peanut butter in the microwave. Start with 1 minute and add 30 seconds as needed.
- Add the melted peanut butter, syrup of choice, salt, cinnamon, and vanilla extract in a large bowl.
- Stir to combine. Fold in the oats and nuts or seeds. For nuts and seeds use what you have! Both have great sources of dietary fiber and healthy fats!
- Line a baking sheet with parchment paper, and pour the granola mixture on top. Spread the mixture into an even layer on the baking sheet.
- Bake for 25 minutes.
- Let the granola cool for 30-60 minutes before breaking it into pieces.
