Mediterranean Pork Pasta

Ingredients
- 1 pound pork tenderloin, cut into 1" cubes
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 3 quarts water
- 1 1/4 cups orzo, uncooked
- 1/4 teaspoon salt
- 1 5-ounce package baby spinach, rinsed well
- 1 pint grape tomatoes, halved
- 3/4 cup feta cheese, crumbled
Directions
- Toss pork with pepper. Heat oil in a large skillet over medium heat. Add pork and cook 8-10 minutes or until cooked through.
- Meanwhile, in a large pot, bring water to a boil. Stir in orzo. Cook 8 minutes, uncovered.
- Stir spinach into orzo and cook 45-60 seconds, until spinach just wilted. Drain.
- Add tomatoes to pork and cook until heated through, about 2 minutes.
- Stir orzo and spinach into pork. Remove from heat. Top with cheese and serve.
Recipe Tips
Use any ground meat in place of the pork, such as chicken, turkey, or ground beef.
Try using a baby greens mix with Swiss Chard, kale, and spinach. The heartier greens wilt less and add a nice texture.
