French Spinach Frittata
Frittatas sound fancy but they are actually really easy to make and will make you seem even cooler to your friends at your weekend brunch. Enjoy this recipe with some fruit or veggies on the side for extra nutrients!

Ingredients
- 8 large eggs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups spinach, chopped
- 4 green onions, chopped into 1/4-inch pieces
- 1/4 cup feta cheese, crumbled
- 2 teaspoons vegetable oil
Directions
- Preheat the oven to 350 degrees
- Put the eggs, salt, and pepper in the mixing bowl and, stir with a fork until well combined.
- Add scallions, spinach, and feta cheese and mix well.
- Heat oil in an 8-inch ovenproof skillet over medium heat.
- Pour the egg mixture into the skillet and carefully transfer to the oven. Bake until the eggs are set and the top is golden, about 30 minutes.
- Serve right away or cover and refrigerate overnight.
Recipe Tips
Add 1/2 cup cooked bell pepper, onion, or mushrooms for added vegetables.
