Fish Tacos with Peach Salsa

Ingredients
- 1 15-oz can peach halves, drained, rinsed, and chopped (or canned diced peaches, drained)
- 1/2 medium red pepper, diced
- 1/4 small red onion, diced
- 1 medium jalapeno pepper, seeded, diced
- 1 tablespoon cilantro, chopped
- 2 teaspoons lemon juice
- 1 pound cod fillets, breaded, thawed
- 1 tablespoon chili powder
- 8 6-inch flour tortillas (or corn if you have them)
Directions
- Preheat oven to 350 degrees. Place thawed breaded cod on a sheet pan.
- In a medium bowl, stir together chopped peaches, bell pepper, onions, jalapenos, cilantro, and lemon juice; cover and refrigerate until ready to use.
- Bake cod until flakes easily with a fork (145 degrees Fahrenheit), about 15 minutes.
- Thinly slice fish or cut into cubes.
- Wrap tortillas in a damp towel or damp paper towel and microwave for 1 minute 30 seconds until warm.
- To serve, fill each tortilla with 1/2 fish fillet and about 1/3 cup of salsa.
