Easy Turkey Broth
This recipe is a great way to use leftover turkey bones after Thanksgiving!

Ingredients
- 2-4 pounds leftover turkey bones, some meat still attached
- 2 medium yellow onions, root removed and cut in half (skin still on)
- 4 large carrots, cut into 3 inch pieces
- 4 large celery stalks, cut into 3 inch pieces
- 1 each bay leaf
- 1/4-1/2 teaspoon whole black peppercorns
- 4-6 sprigs parsley, whole
- 1/2 teaspoon thyme
Directions
- Put all of the ingredients in a large pot and cover with cold water. Make sure there is 2-3 inches of water covering the ingredients.
- Bring the liquid to a simmer over high heat, and turn down the heat if it starts to boil.
- Simmer slowly for about 2 hours; taste it to check the flavor. Skim off the fat with a ladle every 30 minutes or so.
- Using a collander or strainer, strain the broth into smaller containers.
- Remove the meat from the bones and save it for another use (like soup!).
- Discard vegetables and bones.
- Cool completey, uncovered, before storing.
